INGREDIENTS Tomato vinaigrette 2 garlic cloves, finely grated 2 large ripe heirloom tomatoes, grated coarsely 2 tbsp tiny capers 100ml extra-virgin olive oil 40ml Sherry vinegar 1 tsp salt flakes freshly ground black pepper 1 tsp caster sugar Salad 1/3 country sourdough loaf, crusts removed 2 Tbsp olive oil salt flakes and freshly ground black pepper 2 large fiore di latte 1/2 punnet small yellow cherry tomatoes, cut in half 2 roasted red capsicums, torn 1/4 bunch basil, leaves picked Beef 300g fillet steak, cut into thin slices 3Tbsp plain flour 3tsp Salt flakes Freshly ground black pepper 1. For the vinaigrette, add all ingredients to a bowl, stir to combine, then set aside. 2. Heat a drying medium frying pan over a medium heat. Tear the bread into rough pieces, about the size of a 20-cent piece, and add to the pan. Drizzle the oil over and toss for about 10 minutes to toast, then season with salt and pepper and remove from the heat 3. Preparation time: 20 minutes Cooking time: 40 minutes Serves: 10 TAGS: baking, classic, old-fashioned 200g unsalted butter, cold and coarsely grated 100g cream cheese, broken into small pieces 2¼ cups plain flour 1/3 cup dark brown sugar 1 tsp ground cinnamon ½ tsp ground nutmeg ½ tsp ground cloves ¾ cup molasses ¾ tsp bicarbonate of soda ½ tsp almond essence double cream and caramel sauce, to serve 1 Preheat oven to 200C and place an oven tray on the centre rack. Put 100g butter, the cream cheese and 1 cup flour in a bowl and mix with fingertips, until it becomes shaggy and just holds together. Knead gently until a dough forms, then roll out on a lightly floured surface and line into a 25cm x 5cm loose-base metal pie dish. Chill for 15 minutes until firm. Line pastry with baking paper and pie weights and bake on hot oven tray for 18 minutes. Remove weights and paper and cook a further 5 minutes. 2 Put the remaining butter, remaining flour, sugar and spices in a bowl and rub with fingertips, until a crumb forms. 3 Mix the molasses, bicarb, essence and ¾ cup boiling water in a large bowl, stirring until very well combined and starting to froth. Pour into the shell* and sprinkle over the crumb mixture. Bake immediately for 20 minutes. Reduce heat to 180C and bake for a further 15 minutes or until golden brown. Allow to cool for 10-15 minutes before serving with double cream and caramel sauce. Cowboy Casserole. Preparation time: 15 minutes Cooking time: 1 hour Serves: 6-8 2 brown onions, very finely sliced 2 sticks celery, finely diced 2 carrots, finely diced 6 cloves garlic, minced 1 bunch thyme, very finely chopped ½ cup extra virgin olive oil 2 tsp ground cumin 2 tsp smoked paprika 1 tsp ground coriander 500g beef mince 2 x 400g cans diced tomatoes 2 Tbsp tomato paste sea salt flakes and freshly-ground black pepper 400g can kidney beans, drained and rinsed 400g can corn kernels, drained and rinsed 700g potato gems 1½ cups grated tasty cheese sour cream, guacamole and hot sauce, to serve 1 Preheat oven to 200C. Sauté the onions, celery, carrots, garlic and thyme in 2 Tbsp of the oil in a large deep frying pan over a medium heat for 5 minutes, until well-softened. Mix in the spices, then transfer to a bowl. 2 Pour 2 Tbsp oil into the saucepan and fry the beef mince for 5 minutes, until browned. Mix in the cooked vegetables, tomato paste and diced tomatoes. Season with salt and pepper, then simmer for 20 minutes, until thickened. Stir in beans and corn. Transfer to a 2.5L baking dish. 3 Top with potato gems in a single layer, then bake for 20 minutes. Scatter with cheese then bake a further 5-10 minutes until cheese is melted and golden. Serve with sour cream, guacamole and hot sauce.
